Pork – may not seem like an anti-inflammatory food but pork loin (as used in this recipe) has antioxidative and anti-inflammatory properties and as such decrease free radicals and reduces pro-inflammatory cytokines.

Anti-Inflammatory Pork

Pork – you may think is not anti-inflammatory but this recipe will make you think again!

Equipment

  • 1 Frying Pan with lid

Ingredients
  

  • 1 tbsp fresh grated or easy garlic
  • 1 tbsp fresh grated or easy ginger
  • 1 tbsp fresh chopped or easy chillies
  • 1 large red onion – chopped
  • 1 medium aubergine – cubed
  • 1 large red or yellow or orange pepper – chopped
  • 1 400g length of pork loin
  • 3 tbsp olive or avocado or rapeseed oil
  • 1 large fresh lime

Instructions
 

Step 1

  • Turn the pan on to a low to medium heat. No oil.
  • Take the pork loin and slice it into 1cm slices. Place all the pork loin slices in to the pan and dry fry until browned on both sides.

Step 2

  • Add the garlic, ginger, chillies and onion in to the pan and cook until the onions have caramalised. Stir frequently.
  • Add the cubed aubergine and chopped pepper into the pan and stir in the 3 tbsp of oil, ensuring the oil covers all the ingredients. Cook for 5 minutes until the aubergine softens.

Step 3

  • Before serving, squeeze half a lime over each serving.
